Soil & Water: Endive tolerates acidic soils with a pH of 5.5 to 7.0. Nutritional and watering requirements are moderate. Grow in similar soils as lettuce or cole crops.
Planting & Growing: Start seeds indoors 8 weeks before the last frost, or sow seed directly outdoors every 2 weeks from spring to early summer and late summer to fall. Endive may overwinter outdoors in mild winter climates.
Harvesting & Storage: Harvest leaves as needed when they are a useable size, or harvest the whole plant. Endive is best used fresh; it does not store well. Fall plants harvested after a few frosts are sweeter than their spring counterparts. To blanch, pull up and tie the outer leaves 3 weeks before harvesting.
